Litopenaeus Vannamei 

The South American Penaeus Vannamei, or Asian Litopenaeus Vannamei is the tropical shrimp par excellence. It is also the highest-grade shrimp in the world. Raw, it is naturally greyish and translucent. When cooked, it turns the typical white and red colour of the shrimp we all know.
